Cashew Cream
If you know me, you know this is one of my go to recipes. This elevates any dish to next level and is one of my favorite things to eat. This is a creamy sauce that can be used as a “sour cream” for a dish. I love this over top of eggs + greens, sweet potato’s and avocado, black bean soup, tacos and anything with a Mexican twist. The other amazing thing about this recipe is that it only takes a couple minutes and you can make enough to last a few days.
Ingredients
1 cup of cashews
½ cup of boiling hot water
¼ cup of nutritional yeast
Juice of 1 lemon
Salt to taste
Directions
Add boiling water to cashews in a blender
Add nutritional yeast, lemon juice and salt
Blend until smooth. You may need to add more water slowly to get it to a creamy consistency. Blend for a couple minutes to get it smooth and creamy.
Store in a sealed container in the fridge and eat within 4 days.
