Tofu, Shiitake + Edamame Dumplings

Get ready for all the flavour flav. This recipe is amazing to make for an appetizer or a main. I always eat it as a main dish because- dumplings!!

I use tofu in this recipe but if you are avoiding soy- you could totally substitute it for more shiitakes and edamame. It would still be super delicious.


You can find dumpling // wonton wrappers at most stores. I chose a plant based variety- banyan wonton wrappers.

Recipe:
Serves- 2-4 (depends on if you are having it as an appetizer or meal)

Ingredients:
1 tsp of cooking oil
1/2 onion, diced
2 inch block of ginger, about 2 Tbsp minced
2 cloves of garlic, minced 
2 1/2 cups of cubed tofu (about 3/4 of a block)
salt
pepper 
1 1/2 Tbsp sambal - garlic free
2 Tbsp of Tamari 
1/2 Tbsp of sesame oil
1 cup green cabbage, diced
3/4 cup of shelled edamame 
1 tbsp of miso
1/3 of a cup the green parts only 
1/2 lime, juiced

8-10 shiitakes, stems removed  
1 tsp of sesame oil
1 Tbsp of tamari

For the Sauce:
1 Tbsp of Tamari
1 Tbsp of Sambal (if you aren’t so into spice you can put less or omit)
1/2 lime, juiced 
1 stalk of green onion stalk, thinly sliced
1/2 tsp of sesame oil 

Directions:
1) Preheat oven to 375F
2) In a pan on medium heat, add cooking oil and onions. Cook onions until translucent, add the ginger and cook for a a couple of minutes. Add the garlic and cook again for a couple minutes. Add tofu and add salt and pepper to taste.
3) Coat the shiitakes with tamari and sesame oil. Place on a baking sheet and put in the oven for about 10 minutes.
4) Put a steamer pot on the stove.
5) As the tofu lightly browns, add cabbage, edamame, tamari, sambal and sesame oil. Cook until the cabbage is slightly softened (you do not want to overcook)
6) Add all of this to a food processor. Add the shiitakes, miso and green onions and lime juice. Pulse all together until it is combined. You want some of it to still be a little bit chunky- so you can see the separation of ingredients but it is mixed well.
7) Get your dumpling wrappers ready- placing a small amount of filling in each. Use water to coat the sides to then roll over and seal the dumpling. This is a great part to put on some music and have fun with dumpling making!
8) Do a batch at a time, placing them in the steamer pot- do not layer one on top of the other. Let them steam for about 5 minutes- until the wrappers are soft.
9) Make the sauce by adding all the sauce ingredients to a bowl and mixing.
10) Place your completed dumplings on a plate and continue making more batches until all the filling is complete. You can keep them warm by placing a towel or a pot cover on top of the plate.
